Quintessential Chocolates Co., Inc. premieres their first line of Organic Liquid-Center Chocolates at the 2016 Summer Fancy Food Show, in New York City's Javits Center. The four new flavors – Ginger Liqueur, Spiced Rum, Vanilla Vodka and Wheat Whiskey – are all small-batch organic spirits from American distillers, and enrobed in organic 60% dark chocolate.
"To our knowledge, no one in the world has ever offered certified organic liquid-center chocolates like this," according to company founder and CEO Lecia Duke. Founded in 1984, her company specializes in a centuries-old confectionary technique known as Liqueur Praliné, a skill she learned while apprenticing under a Swiss master Chocolatiér.
This 200-year-old handcrafted process begins by encapsulating liquid within an organic “Zuckerkrust” (sugar shell); creating an edible moisture barrier that clearly defines the essence within – whether it is a spirit, wine, coffee, fruit nectar or a custom cocktail – and allows for the most delicate chocolate shell imaginable.
For their organic chocolate, Quintessential chose Shaman Organic Chocolates, who donates 100% of their proceeds to help sustain the economic and cultural survival of the Huichol Indians, the indigenous people of central Mexico.
"The Huichols are a precious resource," Lecia believes. Considered the last remaining tribe whose pre-Columbian traditions are still intact, Lecia (also native) is inspired by the Huichols living today as they have for thousands of years, in harmony with the Earth and all their relations. Each sale of these Organic chocolates will offer additional proceeds for the Huichol people.
